Blueberry Iced Tea

Summertime is here! And it’s all about flip flops, shady places, and soaking up sunshine. We get to do all three in the blueberry field, and after a hard days work of cleaning and weighing berries, it is rejuvenating to sit down to a glass of cold, iced tea. Its also a great drink to make ahead and pack up for the beach or a picnic.

INGREDIENTS (FOR QUART JAR)

2 peppermint tea bags

4 cups boiling water

4 tbsp sugar

1 cup of blueberries

Mint leaves

Lemon slices

 

Boil 4 cups water and add tea bags to steep. Meanwhile, put 1/2 the blueberries in a bowl, and add sugar. crush them slightly. Remove tea bags from water, and pour over the blueberry mixture. Add 1 cup water and a handful of ice and blueberries to three tumblers. Crush the other half cup of blueberries and add to the steeped tea. Add the juice of a lemon to the steeped tea as well, to your taste. Some of us are happy drinking tea without lemon, but add as much as you enjoy.

 

 

We also like to triple the recipe and take blueberry tea on picnics to the lake or park.
